Victoria sponge cake
Two light sponge layers with strawberry jam and buttercream. Makes 10 slices.
- 200 g caster sugar
- 200 g butter, softened, for cake
- 4 eggs, beaten
- 200 g self-raising flour
- 1 tsp baking powder
- 2 tbsp milk
- 100 g butter, softened, for filling
- 140 g icing sugar
- 1 drop vanilla extract (optional)
- 170 g strawberry jam
- 0 icing sugar, for dusting
- Grease and line two 20cm sandwich tins. Heat oven to 190°C (170°C fan). Beat caster sugar, 200g butter, eggs, flour, baking powder and milk into a smooth batter.
- Divide between tins. Bake for about 20 minutes, until springy and golden; cool completely on a rack.
- Beat the remaining 100g butter with 140g icing sugar and optional vanilla. Spread over one sponge, add strawberry jam and place the other sponge on top. Dust with icing sugar.
