Triple-chocolate brownies

Rich chocolate squares with milk and white chocolate pieces. Makes 16 squares.

  1. Melt butter and dark chocolate gently together; cool. Line a 20cm square tin and heat oven to 180°C (160°C fan).
  2. Whisk eggs and sugar until pale, thick and doubled in volume. Gently fold in melted chocolate, then sifted flour and cocoa. Fold in chopped milk and white chocolate.
  3. Spread in the tin. Bake for 25–35 minutes, until the centre no longer wobbles and a thin crust forms. Cool fully before cutting into 16 squares.
