Spiced root vegetable and lentil stew
Potatoes, carrots and parsnips make this lentil stew a filling dinner.
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 700 g potatoes, peeled and chunked
- 4 carrots, sliced
- 2 parsnips, sliced
- 2 tbsp curry paste
- 1 litre vegetable stock
- 100 g red lentils
- 1 small bunch coriander, chopped
- 0 yogurt and naan, to serve
- Soften the onion and garlic in the oil over a gentle heat for about 4 minutes. Add the chopped potatoes, carrots and parsnips and let them take on a little colour for 6–7 minutes, stirring now and then.
- Stir the curry paste through the vegetables, then add the lentils and stock. When it boils, cover and leave to bubble gently for 15–20 minutes, until the lentils have broken down and the vegetables are soft.
- Season, fold in most of the coriander and serve with yoghurt, the remaining coriander and warm naan.
