Shakshuka
Eggs nestled in a rich tomato sauce, ready for scooping with bread.
- 1 tbsp olive oil
- 2 red onions, chopped
- 1 red chilli, deseeded and chopped
- 1 garlic clove, sliced
- 1 small bunch coriander, stalks and leaves separated
- 2 400g cans cherry tomatoes
- 1 tsp caster sugar
- 4 eggs
- Soften the chopped onions, chilli, garlic and coriander stalks in the oil for 5 minutes.
- Add the canned tomatoes and sugar. Simmer for 8–10 minutes, until the sauce thickens.
- Form four hollows and add an egg to each. Cover and cook gently for 6–8 minutes, until the whites are set. Finish with coriander leaves.
