Salmon with Broccolini and Seared Lemon
Crisp-skinned salmon with broccolini and lightly seared lemons.
- 3 bunch broccolini
- 1 item lemon for juice and zest
- 4 200 g fillet salmon fillets
- 2 item lemons for searing
- 2 tbsp extra virgin olive oil for vegetables
- 1 tbsp oil for fish, estimated
- Cook the broccolini in boiling water for 3–4 minutes, drain, and toss with the lemon juice, lemon zest and extra virgin olive oil.
- Rub the salmon with oil and season. Place it skin-side down in a hot pan for 3–4 minutes.
- Turn the fish and put the halved lemons in the pan cut-side down. Cook until the salmon is done and the lemons are charred, then serve with the broccolini.
