- 350 g cucumber
- 350 g tomatoes
- 100 g red onion
- 30 ml lime juice
- 15 ml olive oil
- 2 g dried mint
- 2 g salt
- 8 g fresh mint
- Wash and finely chop the mint. Wash cucumber and tomatoes; cut into 5 mm dice. Peel and finely dice onion.
- Combine cucumber, tomatoes and onion in a bowl.
- Whisk lime juice, oil, dried mint and salt; toss through the vegetables with the variation ingredient.
- Divide into four side portions and serve. Refrigerate covered at 4 °C if preparing ahead; use within 24 hours.
