Ricotta and Parsley Pasta

Soft ricotta turns a little pasta water into a creamy sauce.

  1. Cook the pasta in salted boiling water and scoop out a cupful of the water before you drain it.
  2. Break up the ricotta in a large bowl, add the hot pasta and chopped parsley, and toss, adding the saved water bit by bit until it turns into a creamy sauce.
  3. Season generously and serve with grated cheese.
