Red lentil, carrot and leek soup
A simple pot of lentils and vegetables for an easy lunch.
- 2 litres vegetable stock
- 150 g red lentils
- 6 carrots, chopped
- 2 leeks, sliced
- 1 small handful parsley, chopped
- Bring the stock and lentils to a boil in a large saucepan. Simmer briefly to start softening the lentils.
- Add chopped carrots and sliced leeks. Cover and simmer gently for 45–60 minutes, until the lentils break down and vegetables soften.
- Adjust seasoning and sprinkle with parsley before serving.
