Ratatouille
A colourful pan of aubergine, courgette, peppers and tomatoes.
- 2 large aubergines
- 4 small courgettes
- 2 red or yellow peppers
- 4 large ripe tomatoes
- 5 tbsp olive oil
- 1 small bunch basil
- 1 onion, sliced
- 3 garlic cloves, crushed
- 1 tbsp red wine vinegar
- 1 tsp sugar
- Cut the aubergines, courgettes and peppers into bite-sized chunks. Score the tomatoes, dip them in boiling water for 20 seconds, then slip off the skins, scoop out the seeds and chop the flesh.
- Fry the aubergine in 2 tablespoons of the oil until soft and browned, then lift it out. Cook the courgettes, then the peppers, each in a tablespoon of oil for about 5 minutes, setting each batch aside.
- Cook the onion gently in the last of the oil for 5 minutes, then the garlic for 1 minute. Add the vinegar, sugar, tomatoes and half the basil, return all the vegetables and let it bubble for 5 minutes. Season and scatter over the rest of the basil.
