Potato salad with shallots and herbs
Tender new potatoes in a creamy, tangy dressing.
- 800 g new potatoes
- 3 shallots, chopped
- 1 tbsp capers (optional)
- 2 tbsp cornichons, chopped (optional)
- 3 tbsp mayonnaise
- 3 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 small handful parsley, chopped
- Boil potatoes in lightly salted water for about 20 minutes, until tender. Drain and cool, then cut into bite-size pieces.
- Add shallots and optional capers and cornichons. Fold in mayonnaise. Mix oil with vinegar and add to taste, then finish with chopped parsley.
