Parsley and mint tabbouleh
A fresh herb salad with bulgur, tomato and lemon.
- 50 g bulgur wheat
- 50 g parsley, chopped
- 50 g mint, chopped
- 200 g tomatoes, deseeded and diced
- 3 spring onions, sliced
- 1 lemon, juiced
- 3 tbsp olive oil
- Rinse and drain the bulgur, pour over 200ml boiling water and leave it to soak for about 30 minutes, until tender.
- Meanwhile, chop the parsley and mint very finely and mix with the diced tomatoes and sliced spring onions.
- Squeeze any excess water from the bulgur, stir it into the herbs, then dress with lemon juice and olive oil. Season and toss well.
