  1. Use fresh or frozen peas. Grate onion and squeeze out excess liquid. Mix onion, beef, salt, pepper and sumac; shape into eight 1.5 cm thick oval patties.
  2. Heat oil in a wide pan and brown patties for 3 minutes per side. Move to a clean plate.
  3. Add diced tomatoes, measured water and variation vegetables to the pan; cover and simmer for 10 minutes. Return patties and simmer for another 8–12 minutes.
  4. Ensure patties reach 71 °C and vegetables are tender. Serve two patties per person with the tomato vegetables. Cool leftovers in shallow containers and refrigerate at 4 °C within 2 hours.
