Homemade tomato soup
Fresh tomatoes and a few everyday vegetables make a warming bowl.
- 1.25 kg ripe tomatoes
- 1 onion
- 1 carrot
- 1 celery stick
- 2 tbsp olive oil
- 2 tsp tomato purée
- 1 pinch sugar
- 2 bay leaves
- 1.2 litres vegetable stock
- Core and quarter tomatoes. Chop onion, carrot and celery, then soften them in oil over low heat for 10 minutes.
- Stir in tomato purée, tomatoes, sugar and bay leaves. Cover and cook gently for 10 minutes. Add hot stock, then cover and simmer for 25 minutes.
- Remove bay leaves. Blend safely with a stick blender, or cool before using a jug blender. Reheat gently and season to taste.
