Homemade naan
Soft pan-cooked flatbreads brushed with butter or ghee. Makes 6 naans.
- 7 g dried yeast
- 2 tsp caster sugar
- 300 g strong white flour
- 0.5 tsp baking powder
- 25 g butter or ghee, melted
- 150 ml natural yogurt
- 1 tbsp nigella seeds
- 125 ml warm water
- 0.5 tsp salt
- 0 extra butter, for brushing
- Stir the yeast and a teaspoon of sugar into 125ml warm water and leave for 10–15 minutes, until frothy. In a large bowl, mix the flour, the rest of the sugar, the baking powder and half a teaspoon of salt.
- Pour in the melted butter, yoghurt, nigella seeds and the frothy yeast and bring together into a dough. Knead for 10 minutes, adding a dusting of flour or a splash of water to get a soft, smooth dough. Cover and leave to rise for about an hour.
- Split the dough into six and roll each into a teardrop shape. Cook one at a time in a very hot, dry frying pan for about 3 minutes, flip and give it another 3–4 minutes. Brush with butter and keep warm while you cook the rest.
