Falafel burgers
Chickpea patties with hummus and watercress in toasted buns.
- 250 g canned chickpeas, drained
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 small bunch parsley, chopped
- 2 rounded tbsp plain flour
- 2 tbsp vegetable oil
- 100 g hummus
- 4 burger buns
- 0 watercress, to serve
- Drain, rinse and thoroughly dry chickpeas. Pulse into coarse crumbs, then pulse in onion, garlic, spices, parsley, flour and seasoning.
- Shape four patties about 2cm thick. Fry in oil for 2–3 minutes per side, until golden and heated through.
- Toast the cut sides of the buns. Spread with hummus and fill with patties and watercress.
