Couscous with Tuna and Cherry Tomatoes
Fluffy couscous topped with tuna and softened cherry tomatoes.
- 1 cup couscous
- 0.5 bunch spring onions
- 2 clove garlic
- 190 g tuna in olive oil
- 250 g cherry tomatoes, estimated
- 0.75 cup boiling water
- 2 tbsp olive oil
- Mix the couscous with the sliced spring onions and a drizzle of oil, pour over the boiling water, cover and leave until tender.
- Warm the garlic in the remaining oil, add the tuna with its oil and the cherry tomatoes, and cook until the tomatoes burst into a rough sauce.
- Fluff the couscous with a fork and spoon the tuna and tomato sauce over the top.
