Cinnamon brioche French toast
Golden brioche with vanilla, cinnamon and optional fresh berries.
- 2 large eggs
- 80 ml whole milk
- 40 ml double cream
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
- 4 thick slices brioche
- 2 tbsp vegetable oil
- 2 tbsp butter
- 0 icing sugar and berries (optional)
- Beat the eggs, milk, cream, vanilla and cinnamon together in a wide dish. Soak each slice of brioche for 2–3 minutes, then turn it over and give the second side about 2 minutes.
- Warm half of the butter and oil in a non-stick pan on medium. Cook the soaked slices two at a time, about 3 minutes per side, until they are well browned and no longer wet in the middle. Add the rest of the butter and oil for the second batch.
- Finish with a dusting of icing sugar and fresh berries if you have them.
