Butter Bean and Tuna Salad
Butter beans and tuna make a satisfying lemon-dressed salad.
- 2 tbsp lemon juice
- 185 g tuna in oil, drained
- 0.25 item small red onion
- 400 g canned butter beans, drained
- 1 handful mixed salad leaves
- 2 tbsp olive oil, estimated
- Whisk the lemon juice and olive oil in a salad bowl with a little salt and pepper.
- Slice the red onion very thinly and add it to the dressing with the butter beans and salad leaves.
- Break the tuna into generous flakes, fold it through gently so it stays chunky, and serve.
