Banana bread with a light glaze
Put ripe bananas to work in a soft, sliceable loaf cake. Makes one loaf (8 slices).
- 140 g butter, softened
- 140 g caster sugar
- 2 large eggs, beaten
- 140 g self-raising flour
- 1 tsp baking powder
- 2 ripe bananas, mashed
- 50 g icing sugar
- 1 handful dried banana chips
- Heat the oven to 180°C (160°C fan) and grease and line a 2lb loaf tin. Beat the butter and caster sugar until pale, then add the eggs one at a time with a spoonful of the flour each time.
- Fold in the rest of the flour, the baking powder and the mashed bananas. Scrape into the tin and bake for about 50 minutes; start checking at 35 minutes, and it is ready when a skewer pushed into the middle comes out clean.
- Leave in the tin for 10 minutes, then cool on a wire rack. Stir 2–3 teaspoons of water into the icing sugar, drizzle over the loaf and top with banana chips.
